TANK ROOMS
All fermentation tanks are fully jacketed and individually temperature controlled. These tanks are further
protected from the elements by being placed inside rooms with additional insulation in the roofs and walls.
A full 60 % of these stainless steel tanks range from 635 to 17,500 gallons allowing for a significant
number of small individual wine lots. Red wine fermentations are carefully drained and "tank dug" to
maximize wine quality. The total stainless steel capacity for fermentation and storage exceeds 12 million
gallons.
BARREL ROOMS
Each of the six barrel rooms are individually temperature and humidity controlled to minimize wine loss and
maximize wine quality. Three of the rooms are equipped with CO2 removal equipment allowing barrel
fermentations. Barrel processing features both two and four-barrel "Beard" automated barrel lines and ozone
to care for a 73,000 barrel storage capacity.
GRAPE RECEIVING AND CRUSH PADS
There are three separate grape receiving stations allowing for the smooth and rapid delivery of grapes. Two
of the stations are capable of either red or white grape processing and a third is dedicated only to reds.
The press population consists of eight Bucher presses (320s, 250s, a 150) and a 12,000 liter Europress to
match lot sizes. The three crusher-destemmers are Delta E-8s and an E-6, to help ensure as uninterrupted
receiving capacity as possible. Both facilities utilize the very gentle direct to press belt conveyor systems to minimize
solids.
LABORATORIES
Each facility has a fully equipped laboratory. Both are staffed with an experienced manager and
technicians.
CLIENT AMENITIES
Each client is assigned at least one staff winemaker and dedicated workspaces. Office space is available to
qualifying clients within the San Miguel winery.
Up-to-date information is critical to good winemaking. All services are recorded on individual work orders,
and logged over the next 24 hours into our wine tracking software. When our clients are not at our
facilities, they can access our website with their private code, and access the current status and history
of all their wines.
